Shoga goods is a particular type of tsukemono ginger, a typical system of Japanese cuisine for the preparation of pickles. Ginger is cut into thin strips or roughly chopped and marinated in umezu, the same solution used to marinate plums and get umeboshi. The typical red color comes from the shiso variety of peril, which is diluted in umezu. It is served raw to flavor different dishes such as gyūdon, okonomiyaki, takoyaki and yakisoba. It should not be confused with the other tsukemono called gari, which consists in marinating slices of ginger in a solution of vinegar and sugar and is consumed with sushi.
