Tofu

Tōfu (腐), sometimes referred to as seed rennet (soy),is a food found in almost the entire Far East ( China,Japan, Korea, Vietnam, Thailand, Cambodia). Although its name is Japanese, it has Chinese origins. It is obtained from the curd of the juice obtained from soy and the subsequent pressing in blocks, generally in the form of a parallelepiped. The manufacture of tofu from soy is similar to that of cheese from milk. Tōfu is often confused, in its steamed or fried preparations, with wheat gluten or seitan.

In the following treatment we meet the wording "soy milk". It should be noted that, from a product point of view,this term cannot be used in the labelling and sale of products within the Community: the EuropeanUnionhas banned the sale of products of plant origin if labelled with the term 'milk', since the word 'milk' is reserved for the sale of only drinks derived from the mammary glands of female mammals.

Of japanese origin, technically called “magnesium chloride”, nigari is primarily used to curdle the soy milk in the preparation of the tofu, but its uses range from cooking to cosmetics, to the care of the garden. Nigari is what is left of the sea water after its evaporation and removal of sodium chloride (common cooking salt). It is, therefore, composed almost exclusively of magnesium chloride and, to a lesser extent, mineral, naturally present in the marine water and beneficial for the human body. Nigari is an inorganic compound highly soluble in water, obtained by the processes of water purification, evaporation, and dehydration in the sun, nature does not lend itself to undergo refining synthetic. It mainly serves to curdle the soy milk in the preparation of tofu.
