The great feature of the miso Saikyo is to be done with more rice and less soybeans with a short fermentation period. Saikyo shiro miso has a straw yellow colour and a sweet taste, characteristic. The salt content of this miso is about five percent. Thanks to its delicate taste and less salty, Saikyo shiro miso is a miso preferred to be used as a marinade for fish and vegetables.
