General information: Usually naturally produced soy sauce is pasteurized to intensify color, flavor and aroma. This nama soy sauce, however, is not pasteurized; so it is characterized by a sweet scent and taste, and has a rich and light color. This variety is of the marudaizu type (high quality soy) and has a delicate sweetness and rich flavor that comes from these special soybeans. The new container used was developed by Kikkoman, and adopts a non-return valve cap that allows the soy sauce to be poured but does not allow air to enter. Without exposure to air, soy sauce can be stored for up to 90 days after opening, and thus maintains its fresh color, flavor and aroma.
