General information: Shiitake is an edible medicinal fungus well known in Asia, especially China and Japan, for its important therapeutic properties. Shiitakes contain all essential amino acids, some in the free state, others in the form of proteins. They are rich in minerals such as potassium, sodium, phosphorus, magnesium, aluminum, calcium, sulfur and iron and have large amounts of B vitamins, very important for the harmonious development of all the structures of the organism, including nervous tissue. It has a slightly spicy particular flavor that makes it unique and very versatile in the preparation of numerous recipes. Shiitake is useful for lowering blood cholesterol levels (about 10% per week with a daily dose of 100g), protects the liver and helps the intestines in the formation of bacterial load; finally, the presence of magnesium helps in situations of particular physical fatigue.
