General information:

The matcha or maccha is the japanese green tea, a finely worked, mainly used in the traditional tea ceremony. The leaves are steamed, dried and reduced to fine powder; there are two types, the koicha (thick) that comes from plants older than 30 years, and usucha (thin) that comes from plants under the age of 30 years.
Tea matcha is also used as a spice or natural colorant in foods such as mochi or soba noodles, green tea ice-cream and a huge variety of wagashi cakes, cookies, tiramisu, chocolates, ice creams, industrial and handmade, cream-caramel, muffins, milkshakes, slush drinks).
The preparation and consumption of powdered tea was defined in the ritual zen buddhist. The first monastic code, the zen existing, the Chanyuan qinggui (Rules of purity for the zen monastery, 1103), describes in detail the etiquette for tea ceremonies.
