General information: Matcha or maccha is Japanese green tea, finely worked, used mainly in the traditional tea ceremony. The leaves are steamed, dried and reduced to fine powder; there are two types, koicha (often) which comes from plants over 30 years of age, and usucha (thin) that comes from plants under the age of 30.
Matcha tea is also used as a spice or natural dye in foods such as mochi or soba, green tea ice cream and a huge variety of wagashi (cakes, biscuits, tiramisu, chocolates, industrial and artisanal ice creams, creme-caramel, muffins, milkshakes, granite).
The preparation and consumption of powdered tea was defined in the Buddhist Zen ritual. The first existing Zen monastic codex, the Chanyuan qinggui (Purity Regulation for a Zen Monastery, 1103), describes in detail the etiquette for tea ceremonies.
