Satsuma Mura, a traditionally distilled honkaku imojochu from Kagoshima (the seat of the most popular imo shochu), is a powerhouse of contradictions and complications. It has fragrant with earthy notes as if you had just sliced a sweet potato just unearthed and promises a rich flavor that this shochu delivers without reserves. The first sip is sharp, spicy and pungent to the palate. This softens then in the shades of herbs followed by a flood of sweetness before that comes a persistent acidity with a base of herbs that settles it then on the tongue. A great flavor spreads in the mouth, especially toward the rear where the bitterness is more evident. If you manage to keep the shoku to the front of the tongue you will lose this complexity of bitterness, but you'll be rewarded with a warm sweetness. It is a difficult choice to make, but the nice thing is that you can switch sip after sip!
