Extra Years is one of the versions more pure and more rich Umeshu, has a maceration seriously prolonged of the fruit which can extend up to two or three years. The fruit is first immersed in alcohol to 40% to finish at 17% with a particularly high concentration of sugar. Choya is the most renowned producer of Umeshu, both in Japan and abroad, ranking eighth in the world among the brands of liquor, growing constantly. The Umeshu is alcohol-based Ume, a fruit often referred to as 'plum japanese'.
