Umeboshi is a popular condiment of Japanese cuisine based on salted plums (ume). Japanese plums or fruits from the Prunus mume tree that have reached maturity are usually used. The natural color is an orange brown, given by the content in β-carotene; often, however, it is preferred to color the umeboshi to make it take on a more pleasant red color. Coloring is carried out through the leaves of shiso, an aromatic plant, very rich in anthocyanins. Umeboshi has an acidic and salty accentuated taste given mainly by maceration of plums in salt.
