Tofu

The tōfu (the chinese 豆腐, pinyin dòufǔ), sometimes also referred to as the rennet of seeds (soybean), is a food spread in almost the whole of the far east (China, Japan, Korea, Vietnam, Thailand, Cambodia). Though its name is japanese, has chinese origins. It is derived from the curdling of the juice obtained from soy and the subsequent pressing into blocks, usually in the form of a parallelepiped. The manufacture of tofu from soybeans is similar to that of cheese from milk. Often it blurs the tōfu, in his preparations steamed or fried, wheat gluten , or seitan.
